No, QT Canberra’s flagship restaurant isn’t new—but it is under new leadership, with Executive Chef Michael Box putting his signature touch on Capitol’s ModOz menu.
Think: an elegant antipasto offering with meats from LP’s Quality Meats, crunchy pickles and pecorino from an enormous wheel in the open kitchen, Lamb Short Rib from Junee with salsa verde and toasted cumin, and a 400 Dry Aged T-Bone cooked over Ironbark specially selected from Blackheath Firewood in the Blue Mountains. *Chef’s kiss*.
