Four recipes for the perfect COVID-safe Galentine’s Day brunch

Ah, Galentine’s Day. The annual celebration of female friendship that rose to international acceptance after a hilarious episode of Parks and Rec.
Galentine’s Day isn’t an occasion everyone is familiar with, but in our humble opinion, it should be. Falling on 13 February, Galentine’s is the perfect excuse to celebrate your mates—female or otherwise—and the special friendships in our lives.
Some use Galentine’s Day as an excuse to do something fun with their mates or shower their single friends in love, but this year, like everything, Galentine’s Day might look a bit different.
While Galentine’s Day was first coined by Parks and Rec’s Leslie Knope and celebrated by “kicking it breakfast style” at a café, your friendship group may not be up for heading out en masse to eat just yet. If that’s the case, let us introduce you to the perfect solution—the ultimate at-home Galentine’s Day Brunch BBQ. Outdoors, easy and oh-so COVID Safe.
For these delicious recipes, you’ll be calling on your trusty BBQ to help you out—but don’t worry, there isn’t a sausage in sight. Instead, with a glass of something cold (dare we suggest something fizzy?) in hand, you’ll be whipping up sweet recipes that will make your brunch table look straight out of Pinterest.
Cooking on the barbeque means you won’t be slaving away in the kitchen while your guests mingle, either. Instead, most of these recipes can simply be prepared in advance, refrigerated and then popped onto the BBQ when you’re ready to cook.
To start, classic brunch fare with a twist—Maple Almond Crunch Brioche French Toast. Yum. We know Leslie Knope celebrates Galentine’s Day with waffles, but French Toast will always win out in our books. Sorry Leslie. Pro tip: if you have the time (and patience!) slice some strawberries into little hearts as pictured above. We promise it’s easier than it looks—and don’t forget the maple syrup!
Next, something simple yet delicious—fluffy Ginger Beer Scones served with grilled strawberry jam and cream. No, the jam itself isn’t grilled—it’s the raw strawberries that get a lick of flame before they’re slowly turned into jam in a pan. You’ll find yourself falling in love with the jam’s deep, caramelised sweetness that pairs perfectly with the kick of ginger.
Serve the scones alongside some Mixed Berry Tartlets that look totally artisanal bakery but are super easy to make. We recommend serving with some vanilla ice cream and maybe even a berry-inspired cocktail or mocktail. Just us?
To finish the morning, something you never thought to make on the BBQ—an Apple Tea Cake. Warm and comforting with just a hint of the autumn apple season to come, this cake is the perfect accompaniment to a late morning tea or coffee—or even as a take-home snack for later that afternoon. Who says you don’t look out for your mates?
Of course, if your BBQ is looking a little worse for wear or you haven’t quite gotten around to buying one yet, the Weber Store at Burning Log in Fyshwick has plenty of options for outdoor spaces great and small. They even have an electric range that’s perfect for apartments where gas barbeques are banned.
