Banana, Oat & Date Muffins

Whip up these fabulous Banana, Oat & Date Muffins to use up some of the overripe bananas that are currently languishing in your fruit bowl.
As far as muffins go, they’re pretty healthy…and they’re absolutely delicious!
Banana, Oat & Date Muffins
Serves 12 : 235 calories per serve
what you need
50 g unsalted butter, softened
1/2 cup brown sugar
2 eggs
1 tsp ground cinnamon
1 cup rolled oats
1 cup self raising wholemeal flour
2 large ripe bananas, halved lengthwise and cut into 1cm slices
1/4 cup pure maple syrup
1 cup dates, diced
what to do
Preheat oven to 180C
Cream butter, sugar & cinnamon together. Add eggs and mix well.
Add 1 cup rolled oats & 1 cup wholemeal flour. Add dates, banana & maple syrup gently combine.
Spoon mixture into muffin cases and sprinkle with a few extra oats.
Bake in oven for approx 20- 25 minutes, until golden brown.
Fantastic served warm!
