Sushi Fresh Braddon—locally sourced, expertly made

Finally, sushi has come to Braddon.

The brainchild of Chef Trey Choi, who has 15 years’ experience in Japanese cuisine, Sushi Fresh Braddon was created to offer just that to busy Braddonites—the freshest of sushi.

“At Sushi Fresh we make all our food daily from locally-sourced ingredients,” says Trey. “We place emphasis on continuously making our sushi as we go during the day to meet Canberra’s demand. It means that we don’t try to load up the shelves with a lot of pre-made sushi.”

Trey explains this also allows him to keep sustainability front of mind.

“This approach helps to reduce food wastage and still maintain quality and fresh food for our customers. It’s important to use that we reduce food waste and ensure that delicious food is enjoyed, not wasted,” he says, adding that catering for events is also an option, with larger orders welcome 48-hours in advance.

Sushi Fresh’s colourful little hideaway on Mort Street has seating but also offers takeaway. As for the menu, expect all your favourites— nigari, sashimi, vegetarian seaweed salad, teriyaki chicken and crispy tempura pieces—alongside beautifully presented bento boxes, which make perfect on-the-go lunch or fuss-free dinner.
